Gluten-Free Avocado Brownies

Serves: 16 brownies
  • 2 Ripe avocados
  • 8 oz. melted chocolate (dark, or dairy free)
  • 1 cup sugar
  • 1 tsp. Vanilla
  • ¾ cup All Purpose Gluten Free Flour (Garbanzo bean-based is recommended)
  • ¼ cup cocoa powder
  • ¾ tsp. Baking powder
  • ¼ tsp. Salt
  • 3 Tbsp. vegetable oil (avocado is recommended)
  • 4 oz. chocolate chips (dark, or dairy free)
  1. First place the chocolate over a double boiler and melt completely.
  2. While waiting for the chocolate to melt, scoop out the avocados and puree them in a food processor.
  3. Once completely smooth mix the avocado puree into the melted, slightly cooled chocolate and mix well. Whisk in sugar and vanilla.
  4. In a separate bowl whisk together the gluten free flour, cocoa powder, baking powder and salt.
  5. Mix into the chocolate mixture completely, followed by the avocado oil.
  6. Lastly, add in the chocolate chips.
  7. Pour into a prepared pan (9X9-inch) and bake at 350 degrees for about 30 min.
